Banish Winter Blues (& Whites!) With Colorful Bohemian Brights!

Who says winter has to be a whiteout?

Why not give your winter decor a bold burst of fun color that will not only brighten 
your living environment, but will brighten your spirits too? We already know that the
seasons can directly affect our moods and emotions. Lots of folks complain of winter
blues and seasonal affective disorder (aka SAD or winter depression) during the winter
months. Believe it or not, some folks suggest that part of the cause of these winter 
blues is due to the decrease in daylight from the winter days being shorter. I think
I have to agree with that! I anxiously await summer. 

Whether you prefer to go for bold brights or rich jewel tones, I believe that adding 
pops of unexpected color - especially if they contain unique patterns and luxurious textures - can help turn your mood around. Check it out!

Creamy Chicken Corn Chowder with Potato Gnocchi & Cheddar


This, my friends, is the ultimate comfort chowder. I created this recipe by combining my favorite flavors and textures - from the creamy chicken broth to the soft potato gnocchi, this chowder is a complete meal within itself. 

My 14-year-old daughter now calls this her "favorite soup in the entire world" and I have to say that I agree! Definitely not for the dieter, this chowder is a delicious rich and creamy luxury. Here it is in all it's glory. 

Creamy Chicken Corn Chowder with Potato Gnocchi & Cheddar

You will need:
8 Tablespoons butter (2 for cooking chicken, 6 for making roux)
2 boneless chicken breast cut into bite-size pieces
1/2 medium-sized onion, chopped
2-3 cloves of garlic, crushed
1/4 cup all purpose flour
1 - 32 oz. box chicken broth (or 3 - 14 oz. cans)
1 cup heavy cream 
1 cup whole milk or half and half
One large potato peeled and chopped (about 1 cup)
3/4 cup of peeled chopped carrots
6 ounces extra sharp white cheddar cheese, shredded
1/4 teaspoon Thyme
Salt and fresh ground black pepper
16 oz. package of refrigerated potato gnocchi 

Instructions:
Melt 2 tablespoons of butter in a large soup pot.
Cut two chicken breasts into bite-size pieces, add to soup pot and sauté until completely cooked. Season lightly with salt and pepper.

Add one half chopped onion.
Add three crushed cloves of garlic.
Cover and cook over low heat, stirring occasionally.

In a separate medium soup pot melt 6 tablespoons of butter over medium heat until bubbly. Add 1/4 cup of flour and whisk until brown creating a roux. Continue to whisk over medium-high heat until roux is golden brown.


Once roux is golden brown, whisk in entire box of chicken broth, heavy cream and milk (or half and half). Bring to a simmer, stirring constantly.

Add broth and cream/milk mixture to large soup pot containing the cooked chicken.

Add one large peeled, chopped potato
Add 3/4 cup chopped carrots
Add shredded cheddar cheese (6oz) 
Add 1 bag (about 2 cups) frozen sweet corn
Add salt and ground black pepper to taste 
Add thyme

Stir, bring to a simmer, then lower heat to medium and cover, cooking until potatoes and carrots are nearly fork-soft, about seven minutes. 

Add potato gnocchi. 

Stir and simmer until gnocchi is cooked, about two minutes. Serve hot. Enjoy!

Variations:Note - This recipe is easily adjustable - here are a few different ways that I have made it:
You can add another chicken breast if you like it with more chicken.
You can add more or less cheese depending on your tastes.
You can use two potatoes instead of one, or omit them completely if you prefer. I have found that one big one works well. 
To make it super-decadent, use 2 cups of heavy cream and omit the milk. This variation is super rich and delicious but of course has more fat and calories. I like it on the rich side so I've found that 1 cup heavy cream and 1 cup of half and half is my preferred way to make it. Season to taste!

Heart Shaped Jewelry For Valentine's Day!




Hi friends! I hope your year has been off to a great start! I have been super-busy making lots of new jewelry. After all, Valentine's Day is right around the corner. That means lots and lots of heart shaped necklace pendants.

New china patterns that I just listed in my shop include purple pansy chintz with a soft yellow background (pictured below) made from vintage porcelain, antique pink or red willow china (shown above and available with and without the red Swarovski crystal - pendant also available in a square shape), as well as some beautiful vintage rose patterns.




The beautiful rose pattern below is a one of a kind - meaning I won't have any more once this one is gone. The roses are just beautiful, but the pattern is also unique because of the blue bubble background behind the roses. I've never seen a china pattern like this before. And I've seen a lot of china patterns!

How To Inspire Your Kids To Be Creative


Are we born creative? I think we are. I think most children seem to have a natural knack for creativity. Isn't it funny then, that when we grow up and become adults, we often turn to children for our own inspiration to be creative? I also think that sometimes children look to adults for some reassurance when exploring their creativity. 

What a great opportunity to teach and show your child how much fun it is to explore their imaginations and be creative. After all, it's not just nature that determines creativity, but nurture too. Think of it as being born with a spark that if nurtured, turns into a flame.

Why encourage your child to be creative? 
We know that creativity can be healing. It can be a soft place to fall when needed. And on a side-note, when I talk about creativity - from the standpoint of this blog in general - I'm usually referring to creativity in the arts, but creativity can be manifested across any discipline whether it be science, engineering, math, cooking, etc. For the sake of this article I'm not talking about creativity as pertaining to any specific discipline, but simply as the ability and the drive to think outside the box, use our imagination, and experiment with being innovative.

Here are just a few ways that you can help your child's creativity blossom.


1. Provide your child with art supplies and give them time to use them. They don't have to be expensive or fancy, or come from any special art store. Crayons, colored pencils, inexpensive watercolor paints and paint brushes, and some drawing pads are all great examples. As well as the supplies, make sure your child has some relaxing time set aside to explore these supplies. 

2. Offer encouragement and praise. Sometimes these two things can be just the thing that your child needs to boost his or her confidence level so that they are comfortable enough to show the world their talents.


3. Set an example. Show your child that it's fun to explore the world around them. If they see you doing something, they will most often want to join in. Remember, children are great imitators, so give them something great to imitate! You don't have to be especially talented in any one area - it's your enthusiasm towards doing something interesting or new that you want them to witness.

4. Read to your child. Reading opens the imagination. Explore a wide variety of different types of books, making sure to try out new things and not always stick to the same theme.             


    
5. Spend time in nature. There's nothing more inspiring than the beauty of nature. 

6. Ease up. It's hard to create when you're under pressure. Give your kids space to be creative, and give them the freedom to create things the way they want to. Give your kids the freedom they need to be creative!

7. Offer your child age-appropriate colorful picture books by talented illustrators. Ed Emberley's Drawing Book of Animals and Richard Scary's What Do People Do All Day are two of my very favorites. Both were a huge inspiration to me when I was little. Most libraries have these books. 




8. Take your kids to age-appropriate museums. Most museums have free or discount days, and many also have activities for kids. While museums may be a bit too much for small children (lots of walking, no touching, quiet environment) they're perfect for older kids.

There so many ways that you can inspire your kids to be creative. Expose them to different types of art, books, music, try different types of food, explore different cultures, and watch their imaginations bloom. 

Give your children the freedom to explore and create on their own. Most importantly, encourage them without being pushy, and praise them without being overly critical. Best of luck in your creative adventures!
